Ingredients

  • Russet Potatoes - 1.5lb
  • Oil According to frying
  • Salt according to taste
  • Sugar - 3 tablespoon
  • Cold Water according to your potatoes
  • White Wine Vinegar - 1teaspoon

Instructions

  • 1 Peel the potatoes and cut the potatoes in 1/2 inch thick and rinse them well with water.
  • 2 Mix sugar, white wine vinegar in a large bowl of cold water
  • 3 Submerge the fries in that prepared brine and cover the fries and keep it in the refrigerator for 1 or 2 hours.
  • 4 After the time, take them out and drain the fries.
  • 5 Again rinse them well and pat dry them by placing on the paper towels.
  • 6 Now, place the skillet on the stove and heat the oil at 300degrees F.
  • 7 Blanch the fries in oil for 5 minutes but only add fries in single layer and do not over crowd them.
  • 8 For every batch give 10 seconds time gap to heat up the oil for next batch.
  • 9 Once all fries are completed, just pat them on the paper towels lined on the wire rack and cool them completely
  • 10 Now again heat the oil to 400 degrees F.
  • 11 Place those cooled potatoes again into the oil and fry them until they are golden brown.
  • 12 Remove them and season with salt by placing on the paper towels.
